Different Fall Produce

This is our third batch of chanterelles from down along the road. Elke and Gabe made mushroom jerky out of the Chanterelles the harvested last time, and said it turned out fine. So we decided to make some of our own with this batch. Stephanie made up a great homemade teriyaki marinade. After marinating the mushrooms they were put into our dehydrator. They did turn out excellent! I had never made mushroom jerky before, so was a little unsure about the dry time. After taking out the dried mushrooms, I grabbed a few pieces and put them back in the dehydrator to see how long they took to get 'too' crispy. As it turned out, even after drying them for several days, they stayed just the right amount of flexible and never did dry out too much. Interesting!

Our experimental products are coming along. The Chilacayote is still pretty small and may not get to a mature size. We'll need to start it earlier next year. The perennial Rocoto pepper plant is producing a fairly large number of small peppers. When I ordered this plant as a trial, they said they were out of red and offered a yellow. Seems I got a red anyway, even though the label claimed yellow. In any case, I came to find out that the Rocoto peppers are on par with, and possibly hotter than, many Habaneras as far as heat. I was expecting a mild pepper. Guess I should have researched a bit more. They are definitely hot! Since tossing these in any of our meals would be WAY too spicy for me, I decided to dry them and make a chili powder type seasoning with them. I'll let you know how that goes later.
The pic below is our harvest of Peruvian Ground Apple Yacon. As I've mentioned before, we bought three varieties to see how well they grew and whether we would want to continue growing them after making a few meals that included the Yacon. With our constant battle with underground rodents, the Yacon were relegated to felt bags in the orchard. Unfortunately, I had a bit of a health issue this year and a lot of my projects got left by the wayside. Of course, even when I'm in the best of health that happens, but at least this time I have an excuse. So this particular variety, and one other, ended up staying in small five or six gallon felt bags the entire summer. By the time we harvested them, you could see the tubers bulging out the sides of the bags. The cramped space also caused a number of them to split, and even more were damaged when trying to remove the packed mass from the bag. All in all an unpleasant experience, but we got enough to get a taste of the tubers, and had plenty of crown material to over-winter for a better trial next year.
