Dry Sourdough, Mush Room Filter Cabinet

Stephanie has been keeping sourdough starter and making a variety of items using it. I hadn't really thought about it before, but after finding out that many others dehydrated their sourdough starter, it does make perfect sense as half of the yeast we use is dried also. So we decided to dehydrate a batch. It worked as advertised and we now have a long term backup.
This is the upper floor of the barn, above the room that we are setting up for the indoor mushroom area. As mentioned before, the walls are concrete so they don't lend themselves to easily knocking holes in them. Hence, the vents come out up here. This cabinet will house the filters for the incoming air. It was made fairly large to both use a larger filter, and to make it easier to change out the filter ... without my having to crawl around on the floor .
